In the need to preserve this meat for the whole year, the creativity of farmers and breeders gave life to the constellation of cold cuts and sausages that we still find today on our tables, and that make us so proud in the world.
This is how the Coglioni del Mulo were born, small sausages that are easy to preserve thanks to their shape that allows them to be hung up for seasoning and subsequent maintenance.
